Ingredients

0/14 ready
  • 500g fresh firm white fish (halibut or sea bass), diced
  • 200ml fresh lime juice
  • 100ml fresh lemon juice
  • 50ml yuzu juice
  • 1 yellow habanero, finely minced
  • 2 tsp edible gold leaf flakes
  • 1 small red onion, thinly sliced
  • 1 cucumber, peeled and diced
  • 2 passion fruits, pulp only
  • 1 ripe mango, diced
  • Handful fresh cilantro, chopped
  • 1 tbsp olive oil
  • Sea salt to taste
  • Plantain chips for serving

The Story & Steps

The Pan Galactic Gargle Blaster is the Hitchhiker's Guide to the Galaxy's most notorious cocktail—a drink so powerful that its effects are likened to "having your brains smashed out by a slice of lemon wrapped round a large gold brick." This ceviche captures that aggressive citrus assault and precious metal imagery in edible form, with enough acidity to make your taste buds see stars and real gold leaf for that brick-to-the-head glamour.

Preparation

  1. Place diced fish in a non-reactive glass or ceramic bowl. Pour over lime juice, lemon juice, and yuzu juice, ensuring all fish is submerged. The citrus mixture should be almost aggressively acidic—this is intentional.
  2. Add minced habanero (include seeds if you really want to feel like you've been hit by a brick). Stir gently, cover, and refrigerate for 30-40 minutes until fish is opaque and "cooked" by the acid.
  3. Meanwhile, soak red onion slices in cold water for 10 minutes to mellow their bite, then drain.
  4. When fish is ready, drain off about half the citrus marinade. Add cucumber, passion fruit pulp, mango, drained onions, and cilantro. Toss gently.
  5. Drizzle with olive oil, season with sea salt, and fold in about half the gold leaf flakes.
  6. Serve in chilled bowls or martini glasses, topped with remaining gold leaf flakes and accompanied by crispy plantain chips.

The combination of triple citrus, tropical sweetness, habanero heat, and actual gold creates a dish that's as disorienting and memorable as its cocktail namesake. Don't Panic—the sensation passes. Eventually.
