Ingredients

0/10 ready
  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 32 oz cream cheese, softened
  • 1 cup sugar
  • 4 eggs
  • 1 teaspoon vanilla extract
  • Gel food coloring (purple, blue, green, yellow, orange, red)
  • 1/2 cup sour cream
  • White chocolate ganache
  • Rock candy for garnish

The Story & Steps

Inside Willy Wonka's factory, the Everlasting Gobstopper represented the pinnacle of candy innovation—a sweet that changed colors and flavors but never disappeared. This cheesecake captures that same sense of wonder with its rainbow layers, though unlike its inspiration, you'll definitely want this one to disappear.

Creating the Layers

  1. Preheat oven to 325°F. Mix graham cracker crumbs with melted butter and press into the bottom of a 9-inch springform pan. Bake for 10 minutes, then cool.
  2. Beat cream cheese and sugar until smooth and fluffy, about 3 minutes.
  3. Add eggs one at a time, then vanilla and sour cream. Mix until just combined.
  4. Divide batter into 6 bowls. Color each bowl a different color: purple, blue, green, yellow, orange, and red.
  5. Carefully pour purple batter into the center of the pan. It will spread naturally.
  6. Next, pour blue batter into the center of the purple. Continue with remaining colors, always pouring into the center.
  7. Wrap the bottom of the springform pan in foil. Place in a water bath (roasting pan with 1 inch of hot water).
  8. Bake for 60-70 minutes until the edges are set but center still jiggles slightly.
  9. Turn off oven and crack the door. Let cheesecake cool in oven for 1 hour.
  10. Refrigerate overnight.

Finishing Touches

Pour white chocolate ganache over the chilled cheesecake, letting it drip down the sides. Top with chunks of rock candy for that true gobstopper aesthetic. When you slice into it, each piece reveals the rainbow of layers—a cross-section of pure imagination. Serve to wide-eyed guests and watch their faces light up with childlike wonder.
