Inspired by Neil Gaiman's Endless, these black sesame meringues shimmer with edible pearl dust—sweet as dreams, fragile as sleep, dark as the Dreaming itself.

  • 1 cup superfine sugar
  • 1/4 teaspoon cream of tartar
  • 2 tablespoons black sesame paste
  • 1 teaspoon vanilla extract
  • Edible pearl dust in silver and gold
  • Edible black luster dust
  • 1/4 cup black sesame seeds, toasted
  • Pinch of salt

The Story & Steps

In Gaiman's universe, Dream of the Endless rules over a realm as fragile and essential as these meringues. One is made of concepts and stories; the other of sugar and air—both dissolve on the tongue, leaving only impressions behind.

Instructions

  1. Preheat oven to 200°F. Line baking sheets with parchment paper.
  2. Ensure mixing bowl and beaters are completely clean and dry—any fat will prevent proper peaks.
  3. Beat egg whites and cream of tartar on medium speed until soft peaks form.
  4. Gradually add sugar one tablespoon at a time, beating on high speed. Continue beating until stiff, glossy peaks form, about 8-10 minutes.
  5. Gently fold in black sesame paste, vanilla, and salt. The mixture will marble beautifully.
  6. Transfer to a piping bag fitted with a large star tip.
  7. Pipe tall spirals onto prepared sheets, about 2 inches apart.
  8. While still wet, dust some meringues with pearl dust and others with black luster dust. Sprinkle with black sesame seeds.
  9. Bake for 2 hours until dry to the touch but not browned.
  10. Turn off oven and let meringues cool completely inside with door closed, about 2 more hours.

These are best eaten at midnight, dissolving slowly on your tongue while contemplating the nature of stories and sleep.
