Preparation

  1. Bring a large pot of water to a rolling boil. Add fresh soba noodles and cook according to package directions, usually 4-5 minutes. Do not overcook—they should retain a firm, almost alive texture.
  2. While noodles cook, prepare the sauce: In a large bowl, whisk together gochugaru, gochujang, soy sauce, rice vinegar, sesame oil, sugar, garlic, and ginger until smooth.
