Ingredients

0/5 ready
  • 1.5 lbs small Yukon gold potatoes
  • 3 tablespoons white miso paste
  • 4 tablespoons unsalted butter
  • 2 tablespoons sesame oil
  • 3 green onions, sliced

The Story & Steps

These aren't your grandmother's potatoes—unless your grandmother was secretly a flavor genius. The combination of fermented miso and butter creates a savory-sweet glaze that transforms humble spuds into something extraordinary.

Preparation

  1. Boil potatoes in salted water for 20-25 minutes until fork-tender. Drain and let cool for 5 minutes.
  2. Preheat oven to 450°F. Place potatoes on a baking sheet and gently smash each one with the bottom of a glass until about ½-inch thick.
  3. Melt butter and whisk in miso paste until smooth. Brush generously over smashed potatoes, then drizzle with sesame oil.
  4. Roast for 25-30 minutes until edges are crispy and golden brown.
  5. Remove from oven, scatter green onions over top, and serve immediately while the edges are still crackling.

Rebel Tip: The key is getting those edges ultra-crispy. Don't crowd the pan, and resist the urge to flip them—let the bottom develop that golden crust undisturbed.
