Curry leaves are the secret weapon of South Indian cooking, and when fried until crispy, they become an irresistible garnish that elevates simple coconut rice into something memorable.

Method

  1. Rinse the rice under cold water until the water runs clear, then drain well.
  2. Combine the rice, coconut milk, ¾ cup water, and salt in a pot and bring to a boil.
  3. Reduce heat to low, cover, and simmer for 15 minutes until liquid is absorbed and rice is tender.
