Ingredients

0/5 ready
  • 2 ribeye or strip steaks (about 1 inch thick)
  • 2 tablespoons finely ground Turkish coffee
  • 1 tablespoon brown sugar
  • 2 teaspoons smoked paprika
  • 3 tablespoons butter

The Story & Steps

In the American South, we know our way around a good steak rub. In Turkey, they know their way around coffee that's strong enough to wake the ancestors. This recipe marries both traditions into something that'll make your taste buds stand at attention.

The secret here is the Turkish coffee—not just any coffee will do. Its ultra-fine grind creates a crust that's part bark, part velvet, with a bitter-sweet complexity that cuts through the richness of a good steak like nobody's business.

Preparation

  1. Remove steaks from refrigerator 30 minutes before cooking to bring to room temperature. Pat them completely dry with paper towels—this is crucial for a good crust.
  2. In a small bowl, combine the Turkish coffee, brown sugar, and smoked paprika. Mix thoroughly until the sugar is evenly distributed throughout the coffee grounds.
  3. Generously coat both sides of each steak with the coffee rub, pressing firmly so it adheres. Don't be shy—you want a thick, even coating.
  4. Heat a cast-iron skillet over high heat until it's smoking hot. Add 1 tablespoon of butter and swirl to coat the pan.
  5. Place steaks in the skillet and resist the urge to move them. Cook for 4-5 minutes until a dark crust forms, then flip. Add remaining 2 tablespoons of butter to the pan, letting it foam around the steaks.
  6. Cook another 4-5 minutes for medium-rare, or until desired doneness. Tilt the pan and use a spoon to baste the steaks with the melted butter.
  7. Remove from heat and let rest for 5-7 minutes before slicing. The crust should be deeply caramelized, almost black in spots—that's exactly what you want.

Serving Notes

Slice against the grain and watch as the pink interior contrasts with that gorgeous dark crust. The coffee doesn't make it taste like breakfast—instead, it adds an earthy, slightly bitter note that amplifies the beef's natural flavors while the brown sugar and paprika bring smoke and sweetness. Serve with something simple like roasted potatoes or a crisp salad; this steak is the star and needs no competition.
