  • 1 tablespoon neutral oil
  • 1 red bell pepper, cut into chunks (or use frozen)
  • 2 green onions, cut into 2-inch pieces (optional)
  • Cooked rice for serving

Preparation

  1. Preheat oven to 425°F (220°C). Line a sheet pan with parchment paper.
  2. Drain tofu and cut into 1-inch cubes. Pat gently with paper towels to remove excess moisture, but don't worry about getting it completely dry.
  3. In a large bowl, whisk together gochujang, maple syrup, soy sauce, rice vinegar, and oil until smooth.
  4. Add tofu cubes, pineapple chunks, and bell pepper to the bowl. Gently toss to coat everything evenly.
  5. Spread mixture in a single layer on the prepared sheet pan. Roast for 25-30 minutes until tofu is golden at the edges and pineapple is caramelized.
  6. Scatter green onions over the top during the last 2 minutes of cooking if using.
  7. Serve immediately over rice, drizzling any pan juices over the top.

No Special Ingredients? Substitute gochujang with 2 tablespoons sriracha plus 1 tablespoon miso paste for a similar flavor profile.
