Passive Caramelized Onions

July 12, 2026 1 min read Mild Rebel 5 ingredients

Forget the constant stirring and hourly commitment. Cook onions in the oven while you do anything else—they'll emerge deeply caramelized without babysitting.

Ingredients

0/5 ready
  • 3 pounds onions, any type, sliced
  • 3 tablespoons butter or oil
  • 1 teaspoon salt
  • 1 teaspoon sugar (optional, for deeper color)
  • 2 tablespoons water

The Story & Steps

Caramelized onions elevate everything they touch but their reputation requires standing at the stove for 45 minutes, stirring constantly. This oven method achieves the same deep, sweet complexity through passive cooking.

The oven's even, ambient heat caramelizes onions uniformly. You'll stir maybe twice in an hour. That's it.

Preparation

  1. Preheat oven to 400°F.
  2. Toss sliced onions with butter, salt, and sugar in a large baking dish or roasting pan.
  3. Add water to create a little steam initially.
  4. Cover tightly with foil and bake for 30 minutes.
  5. Remove foil, stir onions once, and return to oven uncovered.
  6. Bake another 30-40 minutes, stirring once halfway through.
  7. Onions are done when deep golden brown and collapsed to about one-third their original volume.
  8. If they look dry at any point, add a tablespoon of water and stir.

Use immediately or cool and refrigerate for up to two weeks. Add to sandwiches, pasta, pizza, grain bowls, or eat by the spoonful. They're restaurant-quality with minimal attention.
