  • 4 large eggs, separated

  • 1 teaspoon vanilla extract

  • 1/4 teaspoon baking powder
  • Butter for cooking
  • 2 cups frozen sour cherries (or fresh if available)
  • 1/2 cup sugar for compote
  • 1/4 cup water
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch
  • Powdered sugar for dusting

The Story & Steps

These pancakes, known as racuchy or placki serowe in Polish households, transform humble cottage cheese into something ethereal. The key is whipping the egg whites separately, creating a texture that's simultaneously rich and impossibly light—more like a soufflé pancake than traditional flapjacks.

Make the Cherry Compote

  1. Combine cherries, sugar, and water in a small saucepan.
  2. Bring to a simmer and cook for 10 minutes until cherries break down.
  3. Mix cornstarch with lemon juice to create a slurry.
  4. Stir into cherry mixture and cook for another 2 minutes until thickened.
  5. Remove from heat and keep warm.

Prepare the Pancake Batter

  1. In a large bowl, mix cottage cheese, egg yolks, flour, sugar, vanilla, salt, and baking powder until well combined.
  2. In a separate bowl, beat egg whites until stiff peaks form.
  3. Gently fold egg whites into the cottage cheese mixture in three additions, being careful not to deflate.

Cook the Pancakes

  1. Heat a griddle or large skillet over medium-low heat and add a small amount of butter.
  2. Drop batter by 1/4 cup portions onto the griddle.
  3. Cook for 3-4 minutes until bubbles form on the surface and edges look set.
  4. Flip carefully and cook another 2-3 minutes until golden.
  5. Keep warm in a low oven while cooking remaining pancakes.

Serving

Stack pancakes on plates, spoon warm sour cherry compote over the top, and dust with powdered sugar. These are also excellent with a dollop of sour cream or crème fraîche on the side.
