This recipe borrows the Japanese technique of balancing umami with subtle sweetness, creating a breakfast that feels nourishing and deeply satisfying without being heavy. The pickled plum cuts through the richness with its salty-sour punch, while sesame adds textural contrast.

Preparation

  1. In a medium saucepan, bring the water to a gentle boil. Add the rolled oats and reduce heat to low, stirring occasionally for about 5 minutes until the oats are tender and creamy.
  2. While the oats cook, whisk the miso paste with 3 tablespoons of warm water in a small bowl until smooth. This prevents lumps in your porridge.
  3. When the oats are cooked, remove from heat and stir in the miso mixture and honey. Taste and adjust seasoning—you may want a pinch of salt depending on your miso's saltiness.
  4. Divide the porridge between two bowls. Top each with chopped umeboshi, a soft-boiled egg (halved), toasted sesame seeds, and sliced scallions.

Notes

If you can't find umeboshi, substitute with a small amount of preserved lemon or even a squeeze of lime with a pinch of salt. The goal is that briny, tart element that wakes up your palate. This porridge also works beautifully with steel-cut oats—just increase the cooking time to about 20 minutes.
