  • 1 tablespoon berbere spice blend
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 small tomato, diced
  • 1 tablespoon tomato paste
  • 1½ cups vegetable broth
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • 1 tablespoon fresh cilantro, chopped
  • Plain yogurt for serving

Berbere is Ethiopia's gift to the spice cabinet—a complex blend of chili, fenugreek, cardamom, and more. When you're cooking solo, this becomes your secret weapon for transforming humble lentils into something extraordinary.

Preparation

  1. Rinse the red lentils under cold water until the water runs clear. Set aside.
  2. Heat olive oil in a small saucepan over medium heat. Add diced onion and cook for 5-6 minutes until softened and beginning to brown.
  3. Stir in garlic and berbere spice, cooking for another minute until incredibly fragrant.
  4. Add tomato paste and diced tomato, stirring to combine. Cook for 2 minutes.
  5. Pour in the lentils and vegetable broth. Bring to a boil, then reduce heat to low and simmer for 20-25 minutes, stirring occasionally, until lentils are completely soft and the mixture has thickened.
  6. Season with salt to taste. Serve in a shallow bowl with a dollop of yogurt and fresh cilantro.
