  • 1/4 cup julienned carrot
  • 1/4 cup bean sprouts
  • 3 shiitake mushrooms, sliced
  • 1 egg
  • 1 tablespoon gochujang
  • 1 teaspoon soy sauce
  • 1 teaspoon rice vinegar
  • 1 teaspoon sesame seeds
  • 1 clove garlic, minced

The magic of bibimbap lies in the moment of mixing, and this solo version ensures you get the ideal ratio of crispy rice, seasoned vegetables, and spicy sauce in every bite. It's meditative cooking for one.

Preparation

  1. Heat a small stone bowl or cast-iron skillet over medium-high heat. Add half the sesame oil and press the cooked rice into the bottom. Let it sit undisturbed for 5-6 minutes to create a crust.
  2. Meanwhile, blanch the spinach in boiling water for 1 minute, drain, squeeze dry, and season with a pinch of salt and a few drops of sesame oil.
  3. Quickly sauté the carrots, bean sprouts, and mushrooms separately, each for 1-2 minutes with a tiny bit of oil and the minced garlic (divided among them).
  4. Fry the egg sunny-side up in a small pan.
  5. In a small bowl, mix gochujang, soy sauce, rice vinegar, and the remaining sesame oil.
  6. Arrange all vegetables in sections on top of the rice, place the egg in the center, and drizzle with the gochujang sauce.
  7. Sprinkle with sesame seeds and serve immediately, mixing everything together before eating.
