  • 1 teaspoon honey
  • 1/4 cup feta cheese
  • 2 tablespoons Greek yogurt

  • 1 tablespoon pistachios, roughly chopped
  • 1 tablespoon fresh mint leaves, torn
  • Pinch of cumin seeds
  • Salt and black pepper to taste

Preparation

  1. Preheat oven to 400°F (200°C). Peel the carrot but keep it whole. If it's very thick, you can halve it lengthwise.
