Rinse the basmati rice until the water runs clear, then soak in cold water for 20 minutes. Meanwhile, crush the saffron threads between your fingers and steep in 2 tablespoons of hot water.
Cut the chicken thigh into bite-sized pieces and marinate with 1 tablespoon yogurt, half the saffron water, cumin, salt, and pepper for 15 minutes.
Bring a small pot of salted water to boil. Drain the rice and parboil for 5 minutes until barely tender. Drain immediately.
In a small non-stick skillet, melt 1 tablespoon butter over medium heat. Mix the remaining yogurt with 2 tablespoons of the parboiled rice and spread this mixture across the bottom of the pan—this creates your crispy layer.
Gently mound the remaining rice over the yogurt-rice mixture. Using the handle of a wooden spoon, poke 4-5 holes down to the bottom to allow steam to escape. Drizzle the remaining melted butter over top.
Wrap the lid in a clean kitchen towel and cover the pan tightly. Cook on low heat for 25-30 minutes until the bottom is golden and crispy.
While the rice cooks, heat a separate small pan over medium-high heat. Cook the marinated chicken pieces for 6-8 minutes until golden and cooked through. In the last minute, add the barberries and almonds.
To serve, loosen the edges of the rice with a spatula, then invert onto a plate so the crispy tahdig is on top. Top with the saffron chicken, barberries, and almonds. Drizzle any remaining saffron water over the dish.
