  • 1/2 teaspoon cumin
  • 1/4 teaspoon smoked paprika

  • 2 tablespoons couscous

  • 1 tablespoon raisins or chopped dried apricots
  • Salt and black pepper to taste
  • 1 tablespoon crumbled feta or nutritional yeast (optional)
  • Fresh cilantro or parsley if available

The Story & Steps

Who says dorm food has to be beige and sad? This mug stew draws on the bold, layered spices of North African tagines and Levantine stews—dishes traditionally simmered for hours—but compresses all that flavor into a single-serve container you can make between classes.

The magic here is in the spice combination: cumin and paprika bring earthiness, cinnamon adds unexpected warmth, and a hidden handful of dried fruit provides little bursts of sweetness against the savory chickpeas. It's the kind of meal that makes your dorm room smell like a spice market instead of despair.

Preparation

  1. In your mug, combine the chickpeas, diced tomatoes with their juice, tomato paste, cumin, smoked paprika, cinnamon, cayenne, oregano (or za'atar), and garlic. Use a fork to mash about half the chickpeas against the side of the mug—this makes the stew thicker and creamier.
  2. Add the water or broth and the dried fruit. Stir everything together well. Season with a pinch of salt and black pepper.
  3. Microwave on high for 2 minutes, or heat on your hot plate in a small pot for 3-4 minutes until bubbling hot.
  4. Stir in the couscous, making sure it's submerged in the liquid. Cover the mug with a plate and let sit for 3 minutes—the couscous will absorb the liquid and fluff up.
  5. Fluff the couscous with a fork, mixing it through the stew. Top with crumbled feta or nutritional yeast and fresh herbs if you have them.
  6. Eat directly from the mug with a spoon, preferably while wrapped in a blanket and pretending you're in a Moroccan riad instead of a cinderblock room.

Storage hack: Pre-mix your spices in a small jar or baggie at the start of the semester. One less thing to measure when hunger strikes and your brain is fried from organic chemistry.
