  • 1/2 cup all-purpose flour, plus more for dusting
  • 1/4 teaspoon instant yeast
  • 1/4 teaspoon sugar
  • 1/4 teaspoon salt
  • 3 tablespoons warm water
  • 3/4 cup shredded mozzarella
  • 1/4 cup crumbled feta
  • 1 egg yolk
  • 1 tablespoon butter
  • Pinch of nigella seeds (optional)

The Story & Steps

Khachapuri is meant to be torn apart with your hands, mixing the butter and egg into the molten cheese yourself—it's inherently a personal experience, making it perfect for solo dining. This is edible comfort.

Preparation

  1. Mix flour, yeast, sugar, and salt in a bowl. Add warm water and knead for 5 minutes until smooth. Cover and let rest for 30 minutes.
  2. Preheat oven to 450°F (230°C).
  3. Mix the mozzarella and feta together in a bowl.
  4. Roll the dough into an oval about 8 inches long on a floured surface.
  5. Spread the cheese mixture down the center, leaving a 1-inch border.
  6. Fold the long sides up and pinch the ends to create a boat shape.
  7. Place on a parchment-lined baking sheet and bake for 12-14 minutes until golden.
  8. Remove from oven, make a well in the cheese, and add the egg yolk and butter.
  9. Return to oven for 2 minutes, then remove and sprinkle with nigella seeds if using.
  10. Stir the yolk and butter into the cheese with a fork before tearing off pieces of the crust to scoop.

There's no wrong way to eat this, as long as you're getting butter, egg, cheese, and bread in every bite.
