  • 1/3 cup shredded mozzarella
  • 1/4 cup cooked lentils
  • 2 tablespoons diced red onion
  • 2 tablespoons diced bell pepper
  • 1 tablespoon olive oil
  • Fresh cilantro for garnish
  • Crumbled feta (optional)

Preparation

  1. Preheat your oven to 425°F (220°C).
  2. Place the injera on a baking sheet lined with parchment paper.
