  • 1/2 cup pizza sauce
  • 2 cups shredded mozzarella cheese
  • Toppings of your choice
  • 2 tablespoons olive oil
  • Flour for dusting
  • Cornmeal or parchment paper

The Story & Steps

The traditional pizza shuffle—that moment of transferring hot pizza from pan to plate—sends many home cooks into a panic. What if we just eliminated that step entirely?

The Sideways Setup

  1. Preheat your oven to 450°F. Here's the key: Pull out your oven rack about halfway.
  2. Place your sheet pan on the pulled-out rack while it's still cool. Line it with parchment paper or dust with cornmeal.
  3. Stretch your pizza dough directly on the pan while it sits on the rack. No lifting required. Brush the edges with olive oil.
  4. Spread sauce, add cheese and toppings right there on the rack.
  5. Carefully slide the rack back into the oven. Bake for 12-15 minutes until the crust is golden and cheese is bubbly.
  6. Pull the rack out again (use oven mitts on the rack itself, not the pan). Let it cool for 2 minutes.
  7. Using a large spatula or two spatulas, slide portions directly from the pan onto plates. No lifting the entire pan needed.

Alternative serving method: Place your serving board or cutting board at the edge of the counter, then slide the pizza directly from pan to board using the parchment paper as a sling.
