Ingredients

0/9 ready
  • 2 cans (15 oz each) chickpeas, drained and thoroughly dried
  • 2 tablespoons Sichuan peppercorns, toasted and ground
  • 1 tablespoon Chinese five-spice powder
  • 2 teaspoons sea salt
  • 1 teaspoon MSG (optional but recommended)
  • 1 tablespoon neutral oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper
  • Zest of 1 lime

The Story & Steps

These chickpeas transform into a snack so addictive, you'll wonder why you ever bought store-bought chips. The Sichuan peppercorns provide that characteristic tingling sensation while the air fryer creates an almost hollow crunch.

Preparation

  1. Spread drained chickpeas on a clean kitchen towel and roll gently to remove all moisture and loose skins. Discard the skins.
  2. Let chickpeas air-dry for 30 minutes if time permits—dryness is crucial.
  3. Toss chickpeas with oil in a large bowl until evenly coated.
  4. Transfer to air fryer basket in an even layer (work in batches if necessary).
  5. Air fry at 390°F for 15 minutes, shaking every 5 minutes.
  6. While chickpeas cook, combine ground Sichuan peppercorns, five-spice, salt, MSG, garlic powder, and cayenne in a small bowl.
  7. When chickpeas are crispy and golden, immediately toss with spice mixture while still hot.
  8. Add lime zest and toss again.
  9. Let cool completely—they'll crisp up even more as they cool.

Store in an airtight container for up to 5 days, though they rarely last that long. The numbing quality of Sichuan peppercorns paired with crispy chickpeas creates a unique snacking experience that keeps you reaching for more.
