Shakshuka for One (And One Mug)

The Middle Eastern breakfast that doesn't know you're eating it for dinner in your pajamas. Eggs poached in spiced tomato sauce, no tagine required.

Ingredients

0/8 ready
  • 1/3 cup crushed tomatoes or marinara sauce
  • Pinch of cumin
  • Pinch of paprika
  • Pinch of red pepper flakes
  • 1 egg
  • Salt and pepper
  • Small handful of feta cheese
  • Pita bread or naan for dipping

The Story & Steps

Shakshuka sounds fancy, which means you can post this on your Instagram story and pretend you're a functional adult with culinary skills. Little do they know you made it in a microwave.

The Almost-Authentic Process

  1. In your mug, combine the crushed tomatoes, cumin, paprika, red pepper flakes, salt, and pepper. Stir it up and microwave for 1 minute until it's bubbling and fragrant.
  2. Make a little nest in the center of the tomato sauce—this is where dreams (and eggs) come true.
  3. Crack the egg into the nest. Pierce the yolk once with a fork (crucial step—unless you want egg shrapnel all over your microwave).
  4. Cover the mug with a paper towel and microwave for 45 seconds. Check the egg. If it needs more time, do 15-second intervals until the white is set but the yolk is still runny.
  5. Top with crumbled feta because you're sophisticated like that.

Tear off pieces of pita and drag them through the sauce and egg. This is a full-contact sport. Napkins are for quitters. If anyone asks why you're eating breakfast food at 9 PM, tell them time is a social construct.
