  • 1 teaspoon rice vinegar
  • 1 teaspoon honey

The coconut milk gives the polenta a subtle sweetness and luxurious richness, while the pandan (if you can find it) adds a unique fragrant note. But the real star is the sambal-dressed soft-boiled egg, which turns every bite into a perfect balance of creamy, spicy, and savory.

Preparation

  1. In a medium saucepan, combine the coconut milk, water, pandan leaf (if using), and salt. Bring to a gentle boil.
  2. Slowly whisk in the polenta in a steady stream to avoid lumps. Reduce heat to low and cook, stirring frequently, for 25-30 minutes until the polenta is thick and creamy and no longer gritty. Stir in the butter. Remove and discard the pandan leaf.
  3. While the polenta cooks, prepare the soft-boiled eggs. Bring a pot of water to a boil, then reduce to a gentle simmer. Carefully lower the eggs into the water and cook for exactly 6½ minutes for jammy yolks.
  4. Transfer the eggs to an ice bath immediately. Once cool enough to handle, peel carefully.
  5. Make the sambal sauce by mixing together the sambal oelek, soy sauce, rice vinegar, and honey in a small bowl.
  6. Divide the hot polenta between bowls. Halve each soft-boiled egg and place two halves on each portion of polenta.
  7. Drizzle the sambal sauce over the eggs and polenta. Garnish with sliced scallions, fried shallots, and fresh cilantro leaves.

The polenta can be made ahead and reheated with a splash of coconut milk or water to restore its creamy consistency. The sambal sauce also keeps well for a week in the refrigerator.
