Preparation

  1. Carefully remove all the skin from your leftover chicken carcass. Scrape off any excess fat or meat clinging to the underside with a knife.
  2. Cut the skin into 2-inch pieces. Pat completely dry with paper towels—this is crucial for crispiness.
  3. Heat a large skillet over medium heat (no oil needed). Add the chicken skin pieces in a single layer.
