The reverse-sear method revolutionized how restaurants cook steaks, and it works magic on vegetables too. By cooking cauliflower low and slow first, then finishing with high heat, you develop deep caramelization and a tender interior that's impossible to achieve with conventional methods.

This isn't complicated—it's just strategic. The technique is accessible to anyone with an oven and a skillet, but the results rival any upscale restaurant. Plus, it's completely hands-off for most of the cooking time.

Preparation

  1. Preheat oven to 275°F (135°C).
  2. Remove outer leaves from cauliflower and trim stem so head sits flat. Cut vertically through the core into 4 steaks, each about 3/4 inch thick. (Save the florets that fall off for another use.)
  3. Mix paprika, coriander, garlic powder, cayenne, salt, and pepper in a small bowl.
  4. Brush both sides of cauliflower steaks with 3 tablespoons olive oil, then rub generously with spice mixture.
  5. Place steaks on a parchment-lined baking sheet and roast for 45 minutes until very tender when pierced with a knife.
  6. When cauliflower is nearly done, heat remaining 1 tablespoon oil in a large skillet over high heat until shimmering.
  7. Carefully transfer cauliflower steaks to the hot skillet. Press gently with a spatula and sear for 2-3 minutes until deeply browned and crusty.
  8. Flip and sear the other side for 2 minutes. Add butter to pan and baste steaks as it melts.
  9. Remove cauliflower to plates. In the same pan, place lemon halves cut-side down and char for 2 minutes.
  10. Squeeze charred lemons over cauliflower, garnish with parsley and flaky salt.

The contrast between the crispy, spiced exterior and the creamy interior is remarkable. The charred lemon adds brightness without any fussy sauce-making. This technique works for any vegetable that benefits from both tender cooking and hard searing—try it with thick slices of celeriac or large portobello mushrooms.
