  • 4 cloves garlic, thinly sliced
  • Red pepper flakes and fresh parsley for garnish

Preserved lemons are a cornerstone of North African cooking—lemons packed in salt and their own juice until they transform into something completely different. The bitterness mellows, the flavor intensifies, and they become soft, silky, and powerfully aromatic. A little goes a long way.

This pasta dish is technically aglio e olio (garlic and oil), but the preserved lemon elevates it to something entirely different—bright, complex, and deeply satisfying with almost no effort.

Preparation

  1. Bring a large pot of well-salted water to boil. Cook pasta according to package directions until al dente. Reserve 1 cup pasta water before draining.
  2. While pasta cooks, heat olive oil in a large skillet over medium-low heat. Add sliced garlic and cook gently until just golden and fragrant, about 3-4 minutes. Don't let it brown.
  3. Add chopped preserved lemon (discard the pulp, use only the peel) and a pinch of red pepper flakes. Stir for 1 minute to release flavors into the oil.
  4. Add drained pasta to the skillet along with 1/2 cup reserved pasta water. Toss vigorously over medium heat, adding more pasta water as needed to create a silky sauce that coats the pasta.
  5. Remove from heat, taste, and adjust seasoning—you probably won't need salt as the preserved lemon is quite salty.
  6. Serve immediately, topped with fresh parsley and more red pepper flakes if desired.

Finding preserved lemons: Look for them at Middle Eastern or specialty food stores, or easily make your own—they just need lemons, salt, and three weeks of patience.
