No oven, no problem. This crispy-bottomed pizza cooks entirely on the stovetop in a small skillet, ready in less time than delivery would take.

Ingredients

0/11 ready
  • ½ cup all-purpose flour plus more for dusting
  • ¼ teaspoon instant yeast
  • ¼ teaspoon sugar
  • ¼ teaspoon salt
  • ⅓ cup warm water
  • 1 teaspoon olive oil plus more for pan
  • 3 tablespoons pizza sauce
  • ⅓ cup shredded mozzarella
  • Your choice of toppings (pepperoni, mushrooms, olives, etc.)
  • Fresh basil
  • Red pepper flakes

The Story & Steps

This recipe breaks the rules—no pizza stone, no oven blast, no problem. The stovetop creates an impossibly crispy crust while the covered cooking melts the cheese to perfection. It's pizza rebellion, table for one.

Instructions

  1. In a small bowl, mix flour, yeast, sugar, and salt. Add warm water and olive oil, stirring until a shaggy dough forms.
  2. Knead on a floured surface for 3-4 minutes until smooth. Let rest for 15 minutes (or up to an hour if you have time).
  3. Roll the dough into an 8-inch circle on a floured surface.
  4. Heat a 10-inch skillet over medium heat with a drizzle of olive oil.
  5. Carefully transfer dough to the hot pan. Cook for 2-3 minutes until the bottom is golden and bubbly.
  6. Flip the dough, quickly spread sauce, add cheese and toppings.
  7. Cover the pan with a lid and cook for 3-4 minutes until cheese melts and the bottom is crispy.
  8. Slide onto a cutting board, top with fresh basil and red pepper flakes.

The Solo Advantage: Customize every inch with exactly what you want. No compromising, no picking off someone else's preferred toppings. This pizza is yours and yours alone.
