  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1.5 cups panko breadcrumbs
  • 1/2 cup mayonnaise
  • 2 tablespoons yuzu juice
  • 1 garlic clove, grated
  • Cooking spray

Purple yam's naturally creamy texture makes it ideal for croquettes, while its stunning color ensures these are the most photographed items on any table. The air fryer transforms the panko into a golden, shattering shell.

Preparation

  1. Steam purple yam cubes for 20-25 minutes until completely tender.
  2. Mash yam with butter, cream cheese, garlic powder, salt, and white pepper until very smooth. Let cool completely.
  3. Form mixture into 12 equal-sized oval cylinders. Refrigerate for 30 minutes to firm up.
  4. Set up breading station: flour in one shallow bowl, beaten eggs in another, panko in a third.
  5. Roll each croquette in flour, dip in egg, then coat thoroughly in panko, pressing to adhere.
  6. Place breaded croquettes on a plate and freeze for 15 minutes—this helps them hold shape.
  7. Preheat air fryer to 375°F (190°C).
  8. Spray croquettes generously on all sides with cooking spray.
  9. Arrange in basket without touching and air fry for 10 minutes, turn carefully, spray again, and cook 8 more minutes until golden.
  10. Mix mayonnaise, yuzu juice, and grated garlic for the aioli.
