  • 1/2 cup pitted dates, soaked
  • 1 teaspoon cumin seeds, toasted
  • 1/2 teaspoon black salt
  • Chaat masala for dusting

Traditional pakoras require a vat of hot oil, but the air fryer creates similar golden exteriors through pure convection. These aren't just coated paneer—they're reconstituted into balls, creating a molten center surprise. The chutney balances everything with its sweet-tart complexity.

Preparation

  1. Mix crumbled paneer with 2 tablespoons besan, garam masala, amchur, green chili, and cilantro. Form into 12 tight balls about 1.5 inches in diameter. Refrigerate for 15 minutes to firm up.
  2. Make the batter: whisk together 1 cup besan, baking powder, a pinch of salt, and sparkling water until smooth and just thicker than heavy cream. Let rest 10 minutes.
  3. Make chutney: blend tamarind concentrate, soaked dates (with soaking water), toasted cumin, black salt, and 1/4 cup water until smooth. Adjust consistency with more water if needed.
  4. Dip each paneer ball into batter, coating completely, and arrange in air fryer basket at 375°F (190°C). Don't overcrowd—work in batches if needed.
  5. Air fry for 12-15 minutes, turning halfway through, until coating is golden brown and crispy.
  6. Remove and immediately dust with chaat masala while hot.
