  • 1 egg
  • 2 tablespoons chopped cilantro
  • 1 green onion, sliced

Preparation

  1. Bring the stock to a simmer in a small saucepan over medium heat. Add the minced garlic and ginger matchsticks, letting them perfume the broth for 2 minutes.
  2. Add the ground pork, breaking it up with a spoon as it cooks. Let it simmer for 3-4 minutes until cooked through.
  3. Stir in the cooked rice, fish sauce, and white pepper. Let everything heat through for 2 minutes—the rice will start to break down slightly, thickening the soup.
  4. Create a small whirlpool in the soup with your spoon, then crack the egg into the center. Let it poach gently for 2-3 minutes, or until cooked to your liking.
