Shakshuka typically requires careful stovetop management and a wide skillet. This version delivers the same spiced tomato and runny egg magic in a microwave-safe mug, perfect for dorms, offices, or anyone without a full kitchen.

Preparation

  1. In a large microwave-safe mug (at least 12 oz capacity), combine the crushed tomatoes, olive oil, garlic, cumin, paprika, and red pepper flakes.
  2. Microwave on high for 1 minute to heat the sauce and bloom the spices.
  3. Stir the sauce, then create a small well in the center.
  4. Crack the egg into the well, then gently pierce the yolk with a fork (this prevents explosion).
  5. Microwave on 50% power for 90 seconds, then check. The white should be mostly set but the yolk still soft.
