0/11 ready
  • For honey: 2 cups raw honey
  • For honey: 50g fresh Thai chilies, sliced
  • For honey: 2 tablespoons filtered water
  • For honey: 1/4 teaspoon sea salt
  • For biscuits: 2 cups all-purpose flour
  • For biscuits: 1 tablespoon baking powder
  • For biscuits: 1 teaspoon salt
  • For biscuits: 1/2 teaspoon baking soda
  • For biscuits: 6 tablespoons cold cultured butter, cubed
  • For biscuits: 3/4 cup cold buttermilk
  • For biscuits: 2 tablespoons cultured butter, melted (for brushing)

The Story & Steps

Hot honey has become trendy, but fermented hot honey? That's next level. The fermentation process creates bubbles, transforms the sweetness, and develops complex flavors that regular hot honey can't touch. Paired with tangy cultured butter biscuits, this is a study in funky contrasts.

Fermenting the Hot Honey (Start 5-7 Days Ahead)

  1. In a clean jar, combine honey, sliced chilies, water, and salt. Stir thoroughly.
  2. Cover with cheesecloth secured with a rubber band—you want airflow but protection from debris.
  3. Leave at room temperature, stirring once daily. You'll see bubbles forming—this is the wild yeast and bacteria going to work.
  4. After 5-7 days, when you see active bubbling and the honey has become more liquid and complex-smelling, it's ready.
  5. Strain out chilies if desired, or leave them in for continued infusion. Transfer to a jar with a tight lid and refrigerate.

Making Cultured Butter Biscuits

  1. Preheat oven to 450°F. Line a baking sheet with parchment.
  2. Whisk together flour, baking powder, salt, and baking soda.
  3. Cut in cold cultured butter using a pastry cutter or your fingers until mixture resembles coarse crumbs.
  4. Make a well in the center and pour in buttermilk. Stir just until dough comes together.
  5. Turn onto a floured surface and pat into a 1-inch thick rectangle. Fold in thirds like a letter, then pat out again.
  6. Cut into rounds with a biscuit cutter, pressing straight down without twisting.
  7. Place biscuits touching each other on the baking sheet for soft sides, or separated for crispy sides.
  8. Bake for 12-15 minutes until golden brown. Brush tops with melted cultured butter immediately.

Serving

Split warm biscuits and drizzle generously with fermented hot honey. The tangy butter in the biscuits complements the complex, funky sweetness of the honey, while the heat from the chilies cuts through the richness. This is comfort food with an edge of danger.
