  • 2 cups kimchi, chopped
  • 1 cup kimchi juice
  • 6 egg yolks
  • 1 cup grated Pecorino Romano
  • 8 ounces bacon or pancetta, diced
  • 2 cups cooked day-old rice
  • 3 tablespoons butter
  • Black pepper to taste
  • Gochugaru (Korean chili flakes) for garnish

The Story & Steps

This recipe was born from a late-night craving and a refrigerator that contained mostly kimchi and pasta. The result? A dish that captures the creamy soul of carbonara while adding the funky, spicy punch of Korea's most famous ferment. The crispy rice adds textural chaos that makes every bite different.

Instructions

  1. Bring a large pot of salted water to boil. Add kimchi juice to the pasta water for extra funk.
  2. Cook spaghetti until just shy of al dente, reserving 2 cups pasta water.
  3. While pasta cooks, crisp bacon in a large skillet until rendered and crunchy. Remove and set aside.
  4. In the same skillet with bacon fat, add butter and day-old rice. Press into an even layer and cook without stirring for 5 minutes until crispy and golden.
  5. In a bowl, whisk egg yolks with Pecorino and plenty of black pepper.
  6. Add chopped kimchi to the skillet with rice and toss to combine.
  7. Add drained pasta to the skillet along with crispy bacon.
  8. Remove from heat and add the egg mixture, tossing quickly and adding pasta water a little at a time to create a creamy sauce.
  9. Serve immediately, topped with more Pecorino, gochugaru, and extra kimchi.

The kimchi provides acidity (like the traditional lemon), umami (amplifying the cheese and pork), and probiotics (because why not be healthy while being indulgent?). This is fusion food that actually makes sense.
