  • 2 tablespoons olive oil

Berbere, the complex spice blend that defines Ethiopian cuisine, typically graces stews and meat dishes. Here, we've channeled its warm, aromatic intensity into crispy chips that showcase the air fryer's ability to create texture from simple batters.

Preparation

  1. In a large bowl, whisk together chickpea flour, berbere spice, salt, garlic powder, and baking powder.
  2. Gradually add water while whisking continuously to create a smooth, thin batter similar to crêpe batter.
  3. Stir in olive oil and let the batter rest for 15 minutes.
  4. Cut parchment paper into circles or squares that fit your air fryer basket.
  5. Preheat air fryer to 180°C (355°F).
  6. Pour a thin layer of batter (about 2-3 tablespoons) onto each piece of parchment, spreading it as thinly as possible with the back of a spoon.
  7. Place one parchment round in the air fryer basket and cook for 8-10 minutes until edges curl up and the chip is completely crisp.
  8. Remove carefully with tongs and let cool on a wire rack. The chip will crisp up further as it cools.
  9. Repeat with remaining batter, working in batches.
  10. Break larger chips into shards if desired and serve with yogurt-based dips.
