Culturing the Cream (1-2 days before)

  4. Refrigerate for a few hours to firm up.

Making the Butter

  1. Pour cold cultured cream into a food processor or stand mixer.
  2. Process on medium-high speed. The cream will become whipped cream, then suddenly break and separate into butter solids and buttermilk.
  3. This takes 5-10 minutes. Once separated, drain off the buttermilk (save it for baking).
