Ingredients

0/12 ready
  • 3 cups leftover cooked rice (any variety), cold
  • 2 tablespoons neutral oil
  • 1 teaspoon sea salt
  • 1 cup shredded cheddar or Oaxaca cheese
  • 1/2 cup whole milk
  • 1/4 cup kimchi, finely chopped
  • 2 tablespoons kimchi brine
  • 1/4 cup pickled jalapeños, sliced
  • 1/4 cup fresh cilantro leaves
  • 2 scallions, thinly sliced
  • 1 lime, cut into wedges
  • Optional: sour cream or crema for serving

The Story & Steps

There's something deeply satisfying about taking yesterday's forgotten container of rice and turning it into something utterly crave-worthy. This recipe was born from a late-night fridge raid that resulted in the happy accident of discovering that pressed, fried rice becomes the perfect vehicle for bold toppings.

The key to success here is using rice that's been refrigerated—the cold, firm grains hold together much better than fresh rice. Day-old takeout rice? Perfect. That pot you made too much of on Tuesday? Even better.

Preparation

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Spread the cold rice evenly on the prepared baking sheet, pressing it down firmly with your hands or a spatula to create a compact layer about 1/4 inch thick. The rice should stick together in a cohesive sheet.
  3. Brush the top generously with neutral oil and sprinkle with sea salt.
  4. Bake for 25-30 minutes until the edges are deeply golden and crispy. The rice should sound hollow when tapped.
  5. While the rice bakes, prepare the kimchi-queso: In a small saucepan over medium-low heat, combine the cheese and milk. Stir constantly until melted and smooth, about 3-4 minutes.
  6. Remove from heat and stir in the chopped kimchi and kimchi brine. Keep warm.
  7. Once the rice is crispy, remove from oven and let cool for 2 minutes, then break into large chip-sized pieces using your hands or a knife.
  8. Arrange the rice chips on a serving platter. Drizzle generously with the kimchi-queso.
  9. Top with pickled jalapeños, fresh cilantro, and sliced scallions.
  10. Serve immediately with lime wedges and optional sour cream on the side.

Chef's Note: These chips are best enjoyed immediately while still crispy, but the rice base can be baked ahead and stored in an airtight container for up to 2 days. Re-crisp in a 350°F oven for 5 minutes before topping.
