Cardamom-Smashed Cucumber Salad

July 11, 2026 1 min read Mild Rebel 5 ingredients

Smashing cucumbers creates craggy edges that grab onto a Nordic-inspired cardamom vinaigrette like nothing else. This is not your average cucumber salad.

Ingredients

0/5 ready
  • 2 large English cucumbers
  • 1 teaspoon ground cardamom
  • 3 tablespoons white wine vinegar
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon sea salt

The Story & Steps

The Chinese technique of smashing cucumbers meets Scandinavian spice sensibilities in this refreshing salad that's become my summer obsession. Smashing creates irregular surfaces that absorb dressing far better than neat slices ever could.

Preparation

  1. Place cucumbers on a cutting board and use the flat side of a chef's knife or a rolling pin to firmly smash them until they split and crack (don't pulverize—you want chunks).
  2. Tear the smashed cucumbers into bite-sized irregular pieces and place in a bowl.
  3. In a small bowl, whisk together cardamom, white wine vinegar, olive oil, and salt until emulsified.
  4. Pour the dressing over the cucumbers and toss gently to coat all the craggy pieces.
  5. Let sit for 10-15 minutes at room temperature to allow flavors to meld before serving.

The cardamom brings a floral, citrusy note that's unexpected and completely delicious against the cool, crisp cucumbers. This salad is perfect alongside grilled meats, fish, or as a refreshing component of a mezze spread.
