  • 1 cup whole milk
  • 2 tablespoons sugar
  • 3 cardamom pods, lightly crushed
  • Small pinch of saffron threads (about 10-12)
  • 1 tablespoon pistachios, chopped
  • 1/4 teaspoon rose water (optional)
  • 1 tablespoon heavy cream
  • Pinch of salt

The Story & Steps

Rice pudding is one of those desserts that gets unfairly dismissed as boring or old-fashioned, but this version is neither. The cardamom and saffron transform humble rice into something perfumed and luxurious—and yes, it's absolutely worth making for just yourself.

Preparation

  1. In a small saucepan, combine the milk, sugar, crushed cardamom pods, saffron threads, and a pinch of salt. Heat over medium-low until it just begins to steam (don't let it boil).
  2. Add the arborio rice and stir well. Reduce heat to low and simmer gently, stirring frequently, for 25-30 minutes until the rice is tender and the mixture has thickened to a creamy consistency.
  3. Remove from heat and fish out the cardamom pods. Stir in the heavy cream and rose water if using.
  4. Let it cool for 5 minutes (it will thicken more as it sits).
  5. Transfer to a serving bowl and top with chopped pistachios. Serve warm or chilled—both ways are excellent.

The saffron does double duty here, adding both a distinctive floral flavor and a gorgeous golden color. Don't skip it, even though it feels extravagant. Sometimes cooking for one means treating yourself to the good stuff.

This pudding keeps well in the fridge for up to three days, though it rarely lasts that long. Reheat gently with a splash of milk, or eat it cold straight from the container at midnight. No judgment.
