  • 250ml warm cream soda
  • 50g melted butter
  • 300g mozzarella, grated
  • 200g feta cheese, crumbled
  • 100g butterscotch chips
  • 4 egg yolks
  • 4 tbsp brown butter
  • 1 tsp vanilla extract
  • Sea salt flakes for finishing

The Three Broomsticks' famous Butterbeer is the drink every Harry Potter fan dreams of tasting—sweet, frothy, and warming. This Georgian khachapuri reimagines that magical brew as an edible experience: boat-shaped bread filled with melted cheese spiked with butterscotch, crowned with an egg yolk swimming in nutty brown butter that mimics the foam on top of a butterbeer mug.

Preparation

  1. Make the dough: Combine flour, yeast, salt, and sugar in a large bowl. Pour in warm cream soda and melted butter, mixing until a shaggy dough forms. Knead for 8-10 minutes until smooth and elastic. Cover and let rise for 1 hour until doubled.
  2. Meanwhile, mix together mozzarella, feta, and butterscotch chips. The butterscotch will melt into pockets of sweetness throughout the cheese.
  3. Preheat oven to 220°C (425°F). Divide dough into 4 portions. Roll each into an oval about 10 inches long. Place a quarter of the cheese mixture down the center of each oval, leaving borders.
  4. Fold the long sides up and over the filling, pinching and twisting the ends to create a boat shape. The center should remain open, exposing the cheese.
  5. Bake for 15 minutes until golden and puffy. Remove from oven and use a spoon to create a well in the center of the melted cheese.
  6. Carefully drop an egg yolk into each well, drizzle with brown butter mixed with vanilla extract, and return to oven for 3-4 minutes until yolk is just set but still runny.
  7. Finish with sea salt flakes and serve immediately, stirring the yolk into the cheese as you eat.

The combination of sweet butterscotch, salty cheese, rich yolk, and nutty butter creates that same warming, indulgent feeling as sipping butterbeer on a cold Hogsmeade day.
