The technique of poaching an egg right in the dish is borrowed from various traditions around the world—it's simply smart cooking.

Preparation

  1. Rinse the lentils thoroughly under cold water. Heat oil in a small saucepan over medium heat. Add onion and cook until softened, about 3 minutes.
  2. Add garlic and berbere, stirring for 30 seconds until fragrant. Add lentils, stock, and tomato. Bring to a boil, then reduce to a simmer.
  3. Cook uncovered for 15-18 minutes, stirring occasionally, until lentils are tender and mixture has thickened. Add water if it becomes too thick—you want a stewlike consistency.
  4. Make a well in the center of the lentils and crack the egg into it. Cover the pan and cook for 4-5 minutes until the egg white is set but yolk remains runny.
  5. Transfer to a bowl, scatter feta and cilantro over top, and serve with torn pieces of injera or pita for scooping.
