The result is a stack of savory pancakes with a subtle heat and earthy depth, balanced by the tangy sweetness of honey-spiked labneh. These are hearty enough to fuel your morning without weighing you down.

Preparation

  1. In a mixing bowl, whisk together the chickpea flour, berbere spice, baking powder, and salt.
  2. Gradually add the water, whisking until you have a smooth batter with the consistency of thin pancake batter. Fold in the diced onion, tomato, and cilantro. Let rest for 10 minutes.
