In the 1987 film Babette's Feast, the French cook spends her entire lottery winnings on a single magnificent dinner that awakens the senses and souls of her guests. This quail en croûte was the centerpiece—a dish of such elegance that it transcends sustenance and becomes grace itself.

Preparing the Quail

  1. Season quail inside and out with salt, pepper, and fresh thyme.
  2. In a skillet, melt butter and sear quail on all sides until golden, about 6 minutes total. Set aside to cool.
